Cobb Smoked Roasted Curry Chicken

This is the first time I have tested this recipe and everyone loves it. It is a very simple recipe however it was left in the fridge for two day to marinate the chicken. The ingredient quantity is up to you, below is a lists of ingredient used.

  • Babas Curry Powder
  • Tamarind Juice
  • Turmeric Powder
  • Salt 2 Tbps
  • Grated Garlic
  • Grated Ginger
  • Cumins Seeds
  • Water

Add all ingredient in a bowl and mix it well, add water little at a time till the mixture becomes a paste. Add paste to chicken and give a good massage even the cavity. 

Once complete, wrap with Aluminium Foil, place in a ziploc bag and leave in the fridge for 2 days. 

For Smoke Roasting, I had used Sukura wood chip courtesy of Alex Lin our Fan and briquettes which burns longer. 

Roasting in oven is possible, not necessary to use a Cobb Primer Grill. The cooking time took 2 hours, it was raining the other day while out camping. Probably hour and a half should do the job, did not waited for the briquettes to turn gray so actual cooking time should be 1 hour.
